The very crunchy and extremely light skin is cut up chequered and is served with sesame seed bread. Then, the meat and the vegetables are presented in a nest of crispy noodles. As third course, the fore-chops,grilled and coated with honey and, last but not least, a delicious stew made the sucking-pig’s bones.This first choice dish was serves at banquets given in Quing Palace and was considered as « Yao Shu » (great art).
